Appam is an easy to make South Indian recipe that you can prepare any time. Appam is a wholesome meal which is not only easy to make but also healthy compared to parathas and chapatis.

For kids, you can add sugar to the batter and top it with crushed dry fruits and grated chocolate or even ice cream. You can add your own innovation and enjoy these appams with your favourite curries. All you need to do is soak some idli rice for 5 hours and then grind it along with some cooked rice, coconut, fresh or desiccated or you can add coconut milk, some yeast for fermenting and make a fine batter.

I always keep the batter in a warm oven to hasten the fermenting process. Switch on the oven at 180c for 1 minute and switch it off so that the oven remains warm. This helps in fermenting the batter within 3 hours. Now we all know how to make round dosas. Instead of the usual round appams, I have made some designs especially for Christmas and I am sure you all will appreciate it and try it yourselves.

Be innovative and try your own designs. Ask the kids to make some designs with your supervision to keep them busy as well as they will be happy to eat their preparation. Merry Christmas to you and your family!!!

CHRISTMAS APPAMS RECIPE:

Prep time: 5 hrs. soaking rice + 10 mins. Cook time: 30 mins. Total time: 5 hrs. 40 mins.

Yields: 10-15 appams depends on the design

Ingredients:

  • 2 cups idli rice, soaked for 5 hrs.

  • 1 cup cooked rice

  • 1 cup desiccated coconut (you can use fresh grated coconut or coconut milk)

  • 1/2 cup lukewarm water for mixing the yeast

  • 1 tsp instant dry yeast

  • 1 tbsp sugar

  • 1 cup or more water + yeast mixture to grind rice & coconut into fine batter

  • 1 tsp salt

Method:

  1. Soak the idli rice for 5 hours

  2. In 1/2 cup lukewarm water, mix 1 tsp dry yeast with 1 tbsp sugar, stir it to dissolve the sugar and keep aside for 10 minutes

  3. Drain the soaked rice and add it to the mixie jar along with coconut, cooked rice, salt, yeast mixture and 1 cup water

  4. Grind all this into a fine batter

  5. Transfer the batter to a large vessel

  6. Switch on the oven at 180c for 1 min. and switch it off. Now the oven will be warm to keep the batter for fermenting

  7. Approximately after 3 hours, the batter will double in size

  8. Remove it out from the oven and stir it to remove the air bubbles

  9. Heat a non-stick pan and sprinkle some water to cool the pan before pouring the batter so that you can form a design of your choice

  10. Now cover the pan and increase the flame to medium and cook the appam

  11. Once cooked, transfer it to a banana leaf, if you have or a straw basket

  12. Now with a wet oily paper tissue wipe the pan before cooking another appam

  13. Follow the same process for the other design appams

Enjoy the appams with your favourite chicken or mutton curry and share it with your friends.
