This is a Muglai dish. Kofta means meat balls. This dish is prepared in two stages. First the koftas are prepared by grinding mutton mince meat along with aromatic herbs and the magical Indian spices. For binding the mince, roasted chana dal (chickpea) is added. I have added cashew nuts too for the extra nutty flavour.

Once the mince meat is ground, small meat balls are rolled out and either fried or cooked in the beautiful gravy.

Curry is prepared with fried onion, ginger, garlic, tomato puree, yogurt and the aromatic spices.

Relish this dish with the mutton kebab like koftas and the goodness of the rich gravy.

MUTTON KOFTA CURRY RECIPE:

Ingredients for the Koftas:

  • 1/2 kg mutton mince

  • 3 tbsp roasted chana dal

  • 20 cashew nuts

  • 1 onion, roughly chopped

  • 1 tbsp each ginger & garlic

  • 1 green chilli

  • 1/2 cup coriander leaves

  • 1 tsp Kashmiri chilli powder

  • 1/2 tsp turmeric powder

  • 1 tsp coriander powder (I dry roast the coriander seeds and powder them)

  • 1 tsp cumin powder (dry roast and powder)

  • 1/2 tsp garam masala powder

  • 1 tsp pink rock salt

  • 1 tbsp oil

  • 4-5 tbsp oil for shallow frying the koftas

Ingredients for the Curry:

  • 3 tbsp oil

  • 1 tsp shahi jeera

  • 1" cinnamon stick

  • 6 cloves

  • 6 green cardamoms

  • 1 bay leaf

  • 1 tbsp each ginger & garlic

  • Paste of 2 onions

  • 1/2 tsp pink salt

  • Puree of 2 tomatoes

  • 1/2 tsp pink salt

  • 1 tsp Kashmiri chilli powder

  • 1 tbsp coriander powder

  • 1/2 tsp turmeric powder

  • 1 tsp Korma masala powder

  • 1/2 cup yogurt

  • 2 cups hot water

  • 1/2 tsp salt

  • 2 whole green chillies

  • 1 tbsp coriander leaves for garnishing

Method for Koftas:

  1. Grind into powder roasted chana dal and cashew nuts

  2. To the same grinder, add 1 roughly chopped onion, ginger, garlic, green chilli, mince, coriander leaves, coriander powder, Kashmiri chilli powder, cumin powder, garam masala powder, turmeric powder, salt, oil and grind into a paste

  3. Transfer this paste to a bowl and make small meat balls (16 medium)

  4. Add 4-5 tbsp oil and shallow fry the meat balls until they are crisp on the outside (they will be soft inside)

  5. Keep them aside

For the curry:

  1. Heat 3 tbsp oil and add shahi jeera

  2. When it sizzles, add cinnamon, cardamoms, cloves and bay leaf

  3. Saute until they turn aromatic

  4. Add ginger, garlic and saute for 2 minutes

  5. Add onion paste, 1/2 tsp salt and saute until onion turns pink

  6. Add tomato puree, 1/2 tsp salt and saute for 5 minutes

  7. Add Kashmiri chilli powder, coriander powder, turmeric powder, Korma masala powder and stir well to mix

  8. Add 1/2 cup yogurt, stir and cook for 2 minutes

  9. Add 2 cups hot water, 1/2 tsp salt and mix to make thick consistency curry

  10. When the curry comes to a boil, add the fried koftas, cover and simmer for 5 minutes over low flame.

  11. Now add coriander leaves and serve hot

Relish hot Mutton Kofta curry and enjoy.
