Here is another Gluten-free Pizza for all my Vegan and gluten intolerant friends. This chickpea crust pizza will surely blow your taste buds!!! This is a super easy recipe. No kneading the dough, no messy hands with sticky dough. All you need to do is make a thick pancake type of batter with chickpea flour. I have added 2 tbsp. of rice flour to make the crust crispy. I have also added 1/4 tsp baking soda to fluff the batter and carom seeds for easy digestion.
You have to pour the batter on a medium high flame skillet and spread it like a pancake, cover and cook until it looks dry, flip it over, brush olive oil on both sides and turn off the heat.
Now you can spread the tomato sauce. (I have mixed the tomato paste with minced garlic, oregano, chilli flakes and salt).
Finally, jazz it up with the toppings of your choice. (I have used pan roasted red onion rings, capsicum slices, olives, fresh tomato slices, broccoli and mozzarella cheese).
Now you cook the pizza crust on a skillet covered with a lid over low flame until the cheese melts.

Ingredients:
2/3rd cup chickpea flour
2 tbsp rice flour
1 tsp pink rock salt
1/2 tsp carom seeds
1/2 tsp baking soda
2/3rd and 2 tbsp water
Olive oil for brushing & for pan roasting
3 tbsp tomato paste
1 tsp minced garlic
1 tsp oregano
1 tsp chilli flakes
1 small red onion rings
1 small red capsicum sliced
1 tomato slices
handful broccoli florets
6-7 olives, cut into slices
mozzarella cheese as much as you desire
Method:
Make a thick batter (like pancake batter) by mixing chickpea flour, rice flour, carom seeds, baking soda, rock salt and water
Heat a pan, brush with olive oil and pour the batter in the centre and spread it out all around
Cook on a medium low flame by covering with a lid
Flip it over when it looks dry
Brush olive oil on both sides
Make a sauce by mixing tomato paste, garlic, oregano, chilli flakes and 2 tbsp water
Spread it on the cooked pizza base
Arrange the toppings i.e. pan roasted red onion rings, capsicum slices, olives, fresh tomato slices, broccoli florets, mozzarella cheese and cook on low flame covered with a lid, until cheese melts
Turn off the heat and enjoy !!!
