This classic dessert is made out of ground rice, coconut, jaggery and flavoured with cardamom, raisins and cashew nuts.

The ingredients are simple but it requires some muscle power to stir the batter continuously, but its worth the effort as it is such a yummy, delicate and melt in the mouth dessert.

Once the batter thickens, add the dry fruits and transfer the cooked mixture to a greased steel plate to cool and set in the plate. Then cut into square or diamond shape and garnish with some more cashew nuts and raisins and enjoy.

MANNI (RICE PUDDING) RECIPE:

Prep time: 5 mins. Cook time: 20 mins. Total time: 25 mins.

Ingredients:

  • 1 cup idli rice

  • 1&1/2 cup coconut milk

  • Some extra water to make it watery

  • 1 cup jaggery

  • 3/4 tsp salt

  • 6 cardamoms

  • 3 tbsp ghee

  • 1/4 cup raisins

  • 1/2 cup cashew nuts

  • Some more cashew nuts and raisins to garnish (optional)

Method:

  1. Wash idli rice thoroughly and soak for 3-4 hours (You can use basmati rice instead)

  2. Drain the rice and add it to the mixer jar

  3. Add 1 cup jaggery (or as per taste)

  4. 1 & 1/2 cups coconut milk (I used store bought one)

  5. Add salt, cardamoms (you can use cardamom powder if you wish) and grind to a fine paste like dosa batter

  6. Transfer this batter to a deep pan and add extra water to make it into watery consistency

  7. Cook over medium flame by stirring continuously

  8. When the batter thickens, add 2 tbsp ghee and keep stirring

  9. When the mixture leaves the sides of the pan, add one more tbsp ghee, raisins and cashew nuts

  10. Stir again and transfer the mixture to a greased steel plate

  11. Smear some ghee to the spatula and flatten the surface to make it smooth

  12. When it cools and sets in the plate, smear some ghee to the cutting knife and cut in diamond or square shape

  13. Garnish with some more cashew nuts and raisins and enjoy.
