In India, mutton means goat meat. This is the healthiest meat which contains less fat than lamb. Mutton cooked in pressure cooker has a melt in the mouth tenderness.
The freshly roasted (in coconut oil) and ground spices like coriander seeds, cumin seeds, red chillies, peppercorns, cinnamon, cloves and ginger garlic adds extra flavour to the curry.
The desiccated coconut balances the spices and adds a creamy texture to the mutton curry.
And the fried potatoes takes the curry to another level.
And finally, the onion fried in ghee poured on the curry makes it heavenly.
