Corn, Capsicum & Cheese Paratha | Easy Healthy Tiffin Box Recipe

Here is a quick and easy method to make parathas. In a food processor, knead the whole wheat flour with oil, salt and especially some carom seeds for easy digestion. This kneading takes just 3 minutes. Keep it aside for 20 minutes.

Meanwhile, prepare the stuffing with sweet corn, capsicum, red onion, green chillies, tasty cheese and little salt to taste. Take a portion of the dough and roll it into a disc. Place the filling in the centre and seal it as shown in the video.

Roll this gently into a thick paratha. Heat a non-stick griddle and cook the paratha covered so that the cheese melts easily and the veggies get cooked. Flip it over when one side is done and keep pressing the paratha with a spatula to cook evenly until it turns golden brown. Brush some ghee and enjoy hot parathas with yogurt or tomato sauce.

For tiffin box, wrap it in a silver foil and enjoy.

CORN, CAPSICUM & CHEESE PARATHA RECIPE:

Serves: 4

Ingredients:

  • 2 cups wheat flour

  • 1 tsp carom seeds

  • 1 tsp salt + 1/2 tsp for the filling

  • 3 tbsp oil

  • Warm water for kneading

  • 3-4 tbsp coriander leaves

  • 1 tender sweet corn

  • 1/2 capsicum, chopped

  • 1/2 red onion, chopped

  • 3 green chillies, deseeded and chopped

  • 1 cup tasty cheese

Method:

  1. Knead the dough with salt, oil and carom seeds

  2. Add the fresh coriander leaves to the dough, cover and keep aside for 20 minutes.

  3. Meanwhile, take a tender sweet corn and separate the corns with a knife

  4. Place them in a bowl along with chopped capsicum, deseeded and chopped green chillies, chopped onion, tasty cheese and 1/2 tsp salt

  5. Mix them well and keep aside

  6. Knead the dough again for a minute

  7. Divide the dough into 4 parts

  8. Take one portion of a dough and roll into a disc

  9. Place 2 tbsp filling in the centre, bring the edges together and seal

  10. Now gently roll again into a thick paratha

  11. Grease a non-stick pan and over low flame place the paratha, cover and cook until one side is done

  12. Flip it over, brush some ghee and press the paratha to cook evenly

  13. When the paratha is golden brown, brush some ghee on both sides and remove

  14. Enjoy hot paratha with yogurt or tomato sauce

  15. For lunch box, wrap the paratha in a silver foil.
