Moong Dal Puri is a puffed Indian fried bread made with wheat flour or all-purpose-flour or mix of both, stuffed with either moong dal, chana dal or urad dal with aromatic Indian spices.

This is one of Rajasthan's best snack loved by everyone. They use lot of ghee to make the puris crisp and also to balance the spices that go in the stuffing.

Try it on a weekend as an evening snack and then I am sure you would love to show off with your friends for your next party.

MOONG DAL PURI RECIPE:

Prep time: 25 mins. Cook time: 10 mins. Total time: 35 mins.

Serves: 6-8

Ingredients:

  • 1/2 cup moong dal

  • 2 tbsp oil for sautéing and enough oil for deep frying

  • 4 tbsp ghee for kneading the dough

  • 2 green chillies, chopped

  • 1 tsp ginger

  • 1 tbsp coriander, crushed

  • 1 tsp cumin seeds powder

  • 1/4 tsp turmeric powder

  • 1/2 tsp chilli powder

  • A pinch asafoetida

  • 1/2 tsp fennel seeds powder

  • 1/2 tsp amchoor powder

  • 1/2 tsp garam masala powder

  • 1 tsp kasoori methi (dried fenugreek leaves)

  • 2 cups wheat flour

  • 1 tsp rock salt

  • 1 tsp carom seeds

  • 1 tbsp semolina

Method:

  1. Wash and soak moong dal for 30 mins.

  2. In a non-stick pan heat 2 tbsp oil and add chopped green chillies, ginger and saute for 2 mins.

  3. Add crushed coriander seeds, cumin seeds powder, turmeric powder, chilli powder, asafoetida, fennel seeds powder, amchoor powder, garam masala powder, kasoori methi and stir to mix all spices

  4. Add the soaked moong dal and saute for a minute

  5. Cool all this mixture and and grind into a coarse paste

  6. In a food processor, add 2 cups wheat flour, rock salt, 4 tbsp ghee, carom seeds, semolina and with warm water make a smooth dough

  7. Cover and keep aside for 20 minutes

  8. Now knead the dough again for a minute and divide it into equal portions as per the size desired by you

  9. Make a lemon size ball, flatten it and place the moong dal mixture in the centre

  10. Bring the edges together and seal the puri as shown in the video

  11. Deep fry the puris over medium hot oil

  12. When the puris float up, keep pressing gently so that they puff up

  13. Flip the puris when one side is brown and crisp

  14. Transfer them to a plate lined with kitchen tissues

  15. Enjoy hot puris as it is or with your favourite sauce
