This Chicken Kasuri Methi dish is my family's favourite and a hit among my friends at parties.

The freshly roasted aromatic spices along with cashew nuts makes a silky smooth gravy and the star ingredient is 'Kasuri Methi' (dried fenugreek leaves which are available everywhere throughout the year.

When you dry roast the dried fenugreek leaves and when you crush and add them to the curry, it gives an exotic smoky flavour to the chicken dish.

I have used chicken thigh fillets which does not need any marination as it is cooked along with the ground spices.

It is a quick and easy dish yet tastes divine. I bet you love it!!!

You can have it with naan, roti or even rice.

CHICKEN KASURI METHI RECIPE:

Prep time: 7 mins. Cook time: 15 mins. Total time: 22 mins.

Serves: 6

Ingredients:

1 kg chicken thigh fillets, cut into 1" pieces

4 tbsp ghee (clarified butter)

1" cinnamon stick

2 bay leaves

6 green cardamoms

5 cloves

1 blade mace

2 tbsp ginger, minced

2 tbsp garlic, minced

4-5 green chillies, chopped

2 onions, chopped

1 1/2 tbsp salt or as per your taste

20 cashew nuts

1/2 cup water to grind the masala

1 tsp Shahi jeera or cumin seeds

1/2 tsp turmeric powder

1 tbsp coriander powder

4 tbsp kasuri methi dry roasted and crushed

1 cup Greek yogurt

1 tbsp fresh coriander leaves for garnishing

Method:

Heat 2 tbsp ghee and add cinnamon, bay leaves, cardamoms, cloves, mace and stir for a minute or until they turn aromatic

Add ginger, garlic, green chillies and saute for 3 mins. until the raw smell disappears

Add onion, 1/2 tbsp salt and saute until onions turn golden brown

Add cashew nuts and saute for a minute

Switch off the flame and keep it aside for cooling

Grind this mixture into a smooth paste by adding 1/2 cup water

Heat 2 tbsp ghee and add Shahi jeera

When it crackles, add the masala paste and saute for a minute

Add turmeric powder, coriander powder, kasuri methi and mix well

Add 1 cup yogurt and saute for a minute

Add chicken pieces, 1 tbsp salt, 1 tbsp kasuri methi and mix well

Cover and cook the chicken until tender

Add another tbsp crushed kasuri methi and adjust the seasoning and consistency of the curry

Switch off the flame and garnish with some coriander leaves

Enjoy hot Chicken Kasuri Methi with naan, roti or rice
