Beetroot Tikkis, cutlets, patties whatever you call it, is a super easy, delicious and heart healthy snack.

All you need to do is boil beetroot and potatoes in a pressure cooker, grate or mash them and add the common spices which are readily available in your kitchen pantry. Add some bread slices soaked in water and squeezed and some corn flour to shape the tikkis to make them crispy.

The roasted peanuts powder gives a lovely nutty flavour to the cutlets.

You can shallow fry them in a non-stick pan with minimum oil and there you have delicious, healthy and colourful snacks for your kids' lunch boxes or as starters for parties.

BEETROOT TIKKI RECIPE:

Ingredients:

  • 2 green chillies, chopped

  • 1 tbsp ginger, chopped

  • 1/4 tsp asafoetida

  • 1 onion, chopped

  • 1 beetroot, boiled and grated

  • 2 potatoes, boiled and mashed

  • 1 tsp dried mango powder

  • 1/2 tsp chaat masala

  • 2 slices bread, soaked and squeezed

  • 2 tbsp corn flour

  • 3 tbsp roasted peanut powder

  • 1 tsp salt

  • 2-3 tbsp coriander leaves, chopped

  • 1 tsp chilli powder

  • 1/2 tsp garam masala powder

  • Breadcrumbs, as required

  • oil for shallow frying

Method:

  1. Heat 2 tsp oil and saute green chillies & ginger for 1 minute

  2. Add asafoetida, onion and saute onions until light brown and keep aside

  3. In a bowl add grated beetroot, mashed potatoes, mango powder, chaat masala powder, 2 bread slices, corn flour, roasted peanut powder, salt, coriander leaves, chilli powder, garam masala and mix.

  4. Add breadcrumbs to shape the tikkis

  5. Sprinkle breadcrumbs on a board and keep all the tikkis

  6. Insert one cashew nut each in the centre of each tikki

  7. Heat 1 tbsp oil in a non-stick pan and shallow fry the tikkis

  8. Flip them over when one side is done

  9. Transfer them to a serving plate

  10. Serve them with chutney or any sauce of your choice
