Moist & Best Banana Nut Bread Ever | Easy Homemade Banana Mix-nuts Bread Recipe

All you need to do is chop some over-ripe bananas which are not only sweet but have cancer preventing properties. Add 1/2 cup oil, 2 eggs lightly beaten, brown sugar, vanilla extract, cinnamon powder and mix. Now add self-raising flour, baking soda, salt, sour cream and gently fold until well combined.

Preheat the oven at 180C.

Line the base of loaf pan with baking paper. Grease the loaf pan and pour half of the mixture and then sprinkle some chopped or crushed mix nuts like almonds, cashew nuts and pistachios. Now pour the remaining mixture and sprinkle some more nuts and some raisins. Kids love it.

Bake for 45 minutes or until the toothpick inserted in the centre comes out clean. Cool it, cut into slices and enjoy.

Ingredients:

  • 4 over ripe bananas, chopped or mashed

  • 1/2 cup oil

  • 2 eggs, lightly beaten

  • 1/2 cup brown sugar

  • 1 tsp Vanilla extract

  • 1 tsp cinnamon powder

  • 2 cups self-raising flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup sour cream

  • 1/2 cup mix nuts like almonds, cashew nuts and pistachios (crushed)

  • Baking paper to line the base of the loaf pan

Method:

  1. Peel the bananas and mash with a fork

  2. Add 1/2 cup oil, 2 eggs lightly beaten, brown sugar, vanilla extract, cinnamon powder and mix

  3. Add self-raising flour, baking soda, salt and mix

  4. Add sour cream and fold until well combined

  5. Line the base of loaf pan and grease the pan all over

  6. Pour half of the mixture and sprinkle half of the mix nuts

  7. Pour the remaining mixture and sprinkle the left over nuts and some raisins

  8. Preheat the oven at 180C and bake for 45 minutes or until the toothpick inserted in the centre comes out clean.

  9. Cool it, cut into slices and enjoy.
