Chilli-lime rubbed grilled corn on the cob is a favourite street snack in India especially during monsoon. Street vendors roast the corn on coal fire, use a lime to rub in the Indian spices and serve it hot. The spices can vary. Generally they mix black salt, red chilli powder, chaat masala and lime of course to rub in the spices.
I have brushed butter after roasting the corn and then rubbed spices like salt, Kashmiri chilli powder, chaat masala and black salt. Kids love this buttery corn as the heat of the chilli is tamed down with the citrusy flavour of lime and butter.
