What started as a necessity of providing a nice hot meal for the poor man on the street is relished by one and all and is served in all Indian restaurants.
Pav Bhaji is a simple and easy meal especially when you are tired after work or on a lazy Sunday afternoon.
Assorted veggies like cauliflower, green peas, capsicum, tomatoes and potatoes are boiled and mashed on a large griddle (I have used the pressure cooker for boiling the vegetables and have used a deep pan instead of the griddle) and flavoured with the magical spice mix called Pav Bhaji Masala Powder which is readily available in all Indian grocery stores.
The onions, ginger, garlic and green chillies enhances the flavour of the vegetables. Butter is the star ingredient of this Pav Bhaji recipe. More the BUTTER it tastes BETTER.
This is the best recipe to feed the fussy kids who don't like vegetables as they can't see them in the dish because all veggies are mashed and blended together. And kids love anything with butter.
Pav is a baked Indian bread roll which goes very well with this exotic dish. Toast the pav with melted butter along with some Kashmiri chilli powder and Pav Bhaji masala powder for that extra zing.
Serve hot Pav Bhaji garnished with some fresh coriander leaves, a dollop of butter and some chopped onions and lemon wedges.
