This is a quick, easy and nutritious breakfast recipe from Maharashtra made with Poha (flattened rice), Batata (potatoes) and kanda (onion).

There are variations of this recipe. Some people make kanda poha, some make batata poha and some just poha.

The flattened rice and potatoes are packed with energy for adults and for kids too. You can pack it for kids' lunch boxes.

To make it more nutritious, I have added mix roasted nuts like, almonds, peanuts, cashew nuts so that your kids don't have to be forced to have the nuts separately.

The onion, green chilli (I have used only 1 chilli. You can add more) ginger and curry leaves add extra flavour to the poha.

KANDA BATATA POHA RECIPE:

Prep time: 3 mins . Cook time: 10 mins. Total time: 13 mins.

Ingredients:

  • 2 cups thick poha

  • salt to taste

  • 1 tsp sugar

  • 1/4 tsp turmeric powder

  • 4 tbsp oil

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • green chilli as per your taste

  • 1 tsp ginger, chopped

  • 10-12 curry leaves

  • A pinch asafoetida

  • 1 large onion, chopped

  • 1 large potato, cut into small cubes

  • 1/2 cup roasted mixed nuts (peanuts, almonds, cashew nuts, etc)

  • 3 tbsp coriander leaves, cut fine

  • 3 tbsp hot water to add after adding potatoes

  • cold water to rinse the poha to make it soft and fluffy

Method:

  1. In a colander add the poha (keep a vessel under it to collect the dripping water)

  2. Pour 2-3 cups water on the poha.

  3. Now add 1 tsp salt, 1 tsp sugar and 1/4 tsp turmeric to the poha and mix gently and keep aside

  4. Heat oil in a pan

  5. Add mustard seeds and wait until they splutter

  6. Lower the flame and add cumin seeds

  7. When the cumin seeds crackle, add chopped green chilli and ginger

  8. Saute for a minute and add a pinch of asafoetida and curry leaves

  9. Now add the onion and saute until translucent

  10. Add the chopped potatoes, 1/2 tsp salt, 1/4 tsp turmeric, 3 tbsp hot water and mix well

  11. Cover and cook until the potatoes are done

  12. Now add the roasted nuts, coriander leaves and mix

  13. Add the poha and mix well

  14. Cover and simmer for 2 minutes on low flame. (If the poha is too dry you can add 1 or 2 tbsp hot water)

  15. Now open the pan and serve in a bowl

  16. Squeeze some lime on the poha, sprinkle some coriander leaves and enjoy.
