This simple and cool raita is a must with all spicy Indian dishes, especially Biryanis. Cucumber and yogurt balances the heat and mellows down the spiciness of the food.

I have added a tempering of mustard seeds, cumin seeds, green chilli, curry leaves, asafoetida and garnished with coriander leaves. All you need to do is grate some cucumber and mix it in yogurt and give a 'tadka'. And your delicious refreshing cucumber-yogurt raita is ready in 5 minutes. How cool that can be?

CUCUMBER-YOGURT RAITA RECIPE:

Prep time: 3 mins. Cook time: 2 mins. Total time: 5 mins.

Ingredients:

  • 1 large cucumber

  • 1 1/2 cup Greek yogurt

  • 1/2 tsp salt

  • Sugar as per your taste, if yogurt is sour

  • 2 tbsp oil

  • 1 tsp mustard seeds

  • 1 tsp cumin sddes

  • 1 green chilli, chopped

  • 10-12 curry leaves

  • 1/2 tsp asafoetida

  • 2 tbsp coriander leaves

Method:

  1. Wash the cucumber, grate and keep aside

  2. In a bowl mix Greek yogurt and salt

  3. Squeeze the water out from the cucumber

  4. Add it to the yogurt mixture

  5. Heat oil and add mustard seeds and when they splutter add cumin seeds

  6. Add green chilli and stir

  7. Add asafoetida

  8. Add curry leaves and switch off the flame

  9. Allow it to cool and pour it over the yogurt mixture

  10. Add coriander leaves and mix gently

  11. Your delicious refreshing cool raita is ready in 5 minutes.
