This simple and cool raita is a must with all spicy Indian dishes, especially Biryanis. Cucumber and yogurt balances the heat and mellows down the spiciness of the food.
I have added a tempering of mustard seeds, cumin seeds, green chilli, curry leaves, asafoetida and garnished with coriander leaves. All you need to do is grate some cucumber and mix it in yogurt and give a 'tadka'. And your delicious refreshing cucumber-yogurt raita is ready in 5 minutes. How cool that can be?
