Gozleme is a Turkish home style food sandwiched between sheets of Turkish dough and cooked on a griddle or barbecue.

In Turkish and Italian Gozleme, they use all-purpose flour for the dough. But I wanted to make it more healthy and hence used wholewheat flour and for the filling, I used spinach and feta cheese but instead of pepper, I added green chilli for that extra flavour and kick.

Serves: 4

Ingredients:

  • 2 cups wholewheat flour

  • 1/2 tsp salt

  • 1/2 tsp sugar

  • 1 egg

  • 5 tbsp oil

  • 1/2 cup warm water

  • 2 garlics, chopped

  • 1-2 green chillies, chopped

  • 1/2 red onion, chopped

  • 100g spinach, chopped

  • 200g Feta cheese, crumbled

  • Ghee for brushing

Method:

  1. In a food processor combine, wholewheat flour, salt, sugar, egg, 3 tbsp oil and 1/2 cup warm water.

  2. Blend to form a smooth dough

  3. Transfer the dough to a bowl, drizzle some oil, cover & keep aside for 20 minutes

  4. Heat a pan and addd 1 tbsp oil

  5. Add garlic, green chilli and saute for a minute

  6. Add red onion and saute until it turns translucent

  7. Add spinach and saute until it wilts

  8. Add crumbled feta cheese and mix gently

  9. Now knead the dough again for a minute

  10. Take a small portion and roll into a disc

  11. Place 2-3 tbsp of spinach mixture in the centre

  12. Fold from all the sides to seal

  13. Place it on a medium hot griddle

  14. When one side turns crispy, flip it over

  15. Brush some ghee on both sides

  16. Remove when both sides are crispy and golden brown

  17. Serve hot with some salad
