Friends, try this super quick and easy Kothimbir Vadi in micro-wave in 3 minutes and then if you like, you can shallow fry for another 3 minutes or you can relish it straightaway. Kothimbir Vadi are crispy coriander fritters made from chickpea flour and coriander leaves and of course the usual green chilli, ginger, lemon juice and peanut crushed to make it more nutritious and flavourful. This is one of the popular Maharashtrian snacks.

Usually the mixture is either cooked or steamed and then deep fried or shallow fried. But these days when we have micro-wave ovens in every house, we can make best use of it to save time and to save the hassle of cleaning more pots. I have cooked it in micro-oven for 3 minutes. One can eat them as they are like Dhoklas but shallow frying them with sesame seeds makes them more nutritious and delicious too. Give it a go. You will love them.

KOTHIMBIR VADI RECIPE:

Prep time: 2 mins. Cook time: 5 mins . Total time: 7 mins.

Ingredients:

  • 1/2 cup chickpea flour

  • 2 tbsp rice flour

  • 2 cups chopped coriander leaves

  • 3/4th cup water

  • 1/2 tsp salt

  • 1 green chilli, chopped

  • 1 tsp ginger, chopped

  • 1/4 tsp turmeric powder

  • 1/4 tsp asafoetida

  • 1/4 cup crushed peanuts

  • 1 tbsp lime juice

  • 1/2 tsp Kashmiri chilli powder

  • 2 tbsp roasted sesame seeds

  • 1/4 tsp baking soda

  • Oil for shallow frying, adding to the mixture and greasing the bowl

Method:

  1. In a bowl combine chickpea flour, rice flour, salt and water

  2. Make a smooth and thick batter.

  3. Add green chilli, ginger, turmeric powder, asafoetida, crushed peanuts, lime juice, coriander leaves, 2 tbsp oil, Kashmiri chilli powder, 1 tbsp roasted sesame seeds and mix it well.

  4. Lastly add baking soda and grease a micro-wave safe bowl at the base and sides

  5. Add the batter and level it evenly

  6. Clove the lid and cook in micro-oven for 3 mins. (For larger quantity you may have to cook for 4-5 mins. depending on the thickness of the batter)

  7. After 3 minutes, open the lid and keep it for cooling

  8. Place it on a board and cut it into squares

  9. Heat oil in a non-stick pan and shallow fry the vadi until crisp and golden brown

  10. Enjoy the vadi with tomato sauce or chutney of your choice
