Kothimbir Vadi are crispy coriander fritters made from chickpea flour and coriander leaves and of course the usual green chilli, ginger, lemon juice and peanut crushed to make it more nutritious and flavourful. This is one of the popular Maharashtrian snacks.

Usually the mixture is either cooked or steamed and then deep fried or shallow fried. But these days when we have micro-wave ovens in every house, we can make best use of it to save time and to save the hassle of cleaning more pots. I have cooked it in micro-oven for 3 minutes. One can eat them as they are like Dhoklas but shallow frying them with sesame seeds makes them more nutritious and delicious too. Give it a go. You will love them.
