Mutton (lamb) Rogan Josh is an aromatic lamb dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine. It is also one of the Indian restaurant popular dish. This dish is packed with flavours.
Rogan Josh means mutton (lamb) cooked in clarified butter. I have cooked the mutton in pressure cooker to save the time.
After cooking the mutton, I have added the dry spices which includes aniseeds powder, dry ginger powder and asafoetida in addition to the regular aromatic whole spices like cinnamon, black and green cardamoms, cloves, cumin, etc. and added yogurt for that buttery soft Rogan Josh flavours.
Its characteristic brilliant red colour comes from the use of liberal amount of dried Kashmiri chillies and paprika.

Ingredients:
1 Kg Mutton
4 tbsp ghee
1" cinnamon
2 black cardamoms
6 green cardamoms
6 cloves
1 blade mace
2 bay leaves
1 tsp Shah Jeera
2 large onions
1 1/2 tbsp salt
1/4 tsp turmeric powder
1 cup water (1/2 while cooking the mutton and 1/2 for mixing with Kashmiri chilli powder)
2 tbsp Kashmiri chilli powder
1/2 tsp dry ginger powder
1/2 tsp fennel powder
1/2 tsp asafoetida
1/2 cup beaten yogurt
Method:
Heat ghee in a pressure cooker
Add cinnamon, black and green cardamoms, cloves, mace, bay leaves and stir until they turn aromatic
Add Shah Jeera and wait until it crackles
Add chopped onions and 1/2 tsp salt
Saute until onions turn golden brown
Add ginger and garlic and saute for 2 mins.
Add turmeric powder and mix
Add mutton, 1 tbsp salt and stir for 2 mins
Add 1/2 cup water, mix it, cover and cook for 15 minutes over low flame, after the 1st whistle
Open the cooker when it cools
Transfer the mutton to a kadai
In 1/2 cup water mix Kashmiri chilli powder
Add it to the kadai
Mix it well
Add dry ginger powder, fennel powder and asafoetida powder and mix
Add beaten yogurt and mix
Cover and cook for 2 minutes
Open the lid, check the seasoning and adjust it as per your taste
Transfer to a serving bowl
