Dry Shrimp Chutney is one of the most popular seafood preparation in coastal Karnataka and Goa. Dry shrimps are tiny prawns that are sun dried. These are frequently used in South East Asian cuisine.
This is an easy and quick recipe which goes well with rice Congee. In Mangalore I have grown up eating this with brown rice congee especially during rainy season when fresh fish is not available. Now even in Australia I can enjoy this chutney because these shrimps are available in Chinese stores, well preserved in refrigerator.
All you need to do is dry roast the shrimps until they become crisp and then add them to the ground chutney only at the end just to mix it so that you feel the crunchiness of the shrimps. Chutney ingredients are the normal ones i.e. onion, dry red chillies, ginger, garlic, desiccated coconut, turmeric powder and little salt. How easy that can be?

Ingredients:
50 g tiny dry shrimps
6 tbsp desiccated coconut
4 dry Kashmiri red chillies
1 tsp chopped ginger
1 tsp chopped garlic
1 small onion
1/4 tsp salt (shrimps are salty. Adjust the salt accordingly)
2 tbsp lime juice
1/4 tsp turmeric powder
3 tbsp water to grind
1 tbsp oil
Method:
Heat a pan and over low heat dry roast the shrimps until they turn crisp
transfer to a plate and cool
Heat oil and saute the chopped onion for 2 mins.
Add chopped ginger, garlic and dry red chillies and saute until the chillies turn crisp
Transfer to a grinder and add desiccated coconut, turmeric powder, lime juice, water and grind coarsely
Now add the roasted shrimps to the grinder and just swirl it round once to mix the shrimps but keep them crunchy
Transfer to a serving bowl
Enjoy with the rice Congee
