Chicken Congee is a popular traditional Chinese breakfast. It is a rice porridge with chicken which is very easy to make and eat and is very economical. It is a perfect comfort food.

To make this Congee more healthy, I have used brown rice and cooked the rice in pressure cooker which saves lot of time. I have also cooked the chicken drumsticks in pressure cooker within 5 minutes.

So, when you are not well or too tired to cook just try this easy and simple recipe which warms up the body immediately. Trust me, your family will love it. Even kids love this delicious Chicken Congee.

INSTANT INDO-CHINESE CHICKEN CONGEE RECIPE

Prep time: 3 mins. Cook time: 15 mins. (if using brown rice) Total time: 18 mins.

Serves: 6

Ingredients:

  • 2 chicken drumsticks

  • 1/2 tsp salt

  • 1 tbsp crushed garlic

  • 1 tbsp crushed ginger

  • 1 tbsp crushed peppercorns

  • 1 tbsp soya sauce

  • 3 tbsp white vinegar

  • 3 tbsp sesame or vegetable oil

  • 1 1/2 cup brown rice or regular white rice

  • 2 chicken stock cubes

  • 2 spring onions

Method:

  1. Wash and soak brown rice for 2-3 hours so that it cooks faster in pressure cooker

  2. Cook the rice with enough water (at least 6 cups) with 2 chicken stock cubes

  3. Slit the chicken drumsticks to cook faster and absorb the spices

  4. Add salt, crushed garlic, crushed ginger, crushed peppercorns, soya sauce, vinegar, oil and mix it well with the chicken

  5. Transfer the chicken to the pressure cooker along with the liquid and cook for 5 minutes over low flame after the 1st whistle

  6. Open the cooker and shred the chicken

  7. Add the shredded chicken to the cooked rice along with the stock from the pressure cooker

  8. Add the white part of the spring onions to the rice, cover and simmer for 2 minutes

  9. Open the lid, check the seasoning and serve hot chicken congee by garnishing with some green spring onions
