I have been cooking most of the vegetables within 10 minutes without making them soft and tender but keeping them little crunchy to retain all the nutrients in them.

Today I will share with you how to make stir-fry some fresh, tender Green Beans within 7 minutes. All you need to do is in little oil, fry some mustard seeds, chana dal, urad dal, green chillies, curry leaves, asafoetida (to prevent any bloating in the stomach) and add the cut green beans, salt, sprinkle some water, cover and cook for 4 minutes, until they are 3/4th done. Keep them slightly crunchy. Now add some lime juice and some desiccated coconut not just for the taste but because COCONUT is one of the best super foods available as per the latest medical research. It reduces the risk of alzheizers, helps balance hormone levels, improves heart health, improves bone health and increases the nutrient absorption of fat soluble vitamins like Vit D, A and E.

So, either use coconut oil for your cooking or add desiccated coconut or coconut milk in your curries for the numerous health benefits of coconut.

Serve these stir-fry Green Beans hot as an accompaniment to rice or chapatis.

GREEN BEANS STIR FRY IN 7 MINS. RECIPE

Prep time: 3 mins. Cook time: 7 mins. Total time: 10 mins.

Ingredients:

  • 1/4 kg. fresh, tender green beans

  • 2-3 tbsp. coconut oil

  • 1 tsp mustard seeds

  • 1 tsp chana dal

  • 1 tsp urad dal

  • 1 green chilli slit (you can add more if you like)

  • 10-12 curry leaves

  • 1/4 tsp asafoetida

  • 1 tsp salt

  • 2 tbsp hot water

  • 4 tbsp desiccated coconut

  • 2 tbsp lime juice

Method:

  1. Wash and stem the green beans and cut into small pieces

  2. Heat 2-3 tbsp coconut oil

  3. Add mustard seeds

  4. When they splutter, add chana dal

  5. Add urad dal and when the lentils turn light brown, add slit green chilli and curry leaves

  6. Stir and add asafoetida and green beans

  7. Add salt, 2 tbsp water, stir, cover and cook for 4-5 minutes until 3/4th done. (Keep them slightly crunchy).

  8. Open the lid add desiccated coconut, lime juice, stir well and switch off the flame.

Serve hot as an accompaniment to rice or chapatis.
