A Panini is a classic Italian grilled sandwich made with a special bread, stuffed with vegetables or meat or both together. It is then warmed in a Panini Press.
If you don't have a Panini Press, you can easily make this sandwich on a heavy cast iron skillet by keeping some heavy weight on it so that the vegetables and meat gets cooked to perfection and grill marks appear on the sandwich.
I have made this sandwich with multi-grain bread and it is loaded with roasted vegetables; eggplant, red onion, bell pepper, carrot, sprout moong (lentils) and topped with slice cheese. You can use any cheese of your choice.
Instead of the regular pepper powder, I have used the magical Indian Tandoori Masala powder, little bit since it is a veggie sandwich. If you use chicken or lamb for this recipe, you can use a bit more quantity of the masala powder.

GRILLED VEGGIE PANINI RECIPE:

4 slices of multi-grain bread slices or any bread of your choice
1 eggplant cut into thin slices
1 red onion cut into slices
1/2 tsp Tandoori masala powder
Butter to spread on the bread
1 capsicum cut into strips
1 carrot, shredded
Moong (green lentil) sprouts
Slice cheese or mozzarella cheese
2 sprigs of coriander leaves
Oil to brush the cast iron grill pan (you can use Panini Press if you have) or any other pan
Salt to taste
Tomato sauce (optional) or any dip of your choice
Heat a cast iron grill pan and brush with oil
Place eggplant slices and cook until 1 side is done
Flip it over and remove when done and keep them aside
In the same pan, roast the red onion slices until slightly brown
Remove and keep them aside
Sprinkle Tandoori masala powder on eggplant slices and onion
Butter the bread on both sides
Take one slice of bread, place eggplant slice, red onion, capsicum strips, shredded carrot, moong sprouts and sprinkle some salt and Tandoori masala powder, if you desire
Place slice cheese and fresh coriander leaves
Place the second slice of bread on top
Same process for the other 2 bread slices
Now heat the cast iron grill and brush some oil
Place the sandwiches and keep some heavy weight on them so that the veggies cook evenly and grill marks show on the sandwich
Flip the sandwich when one side is crisp
Remove and drizzle some tomato sauce or enjoy it with any dip of your choice
