ROAST LAMB WRAPS MADE WITH LEFTOVERS

The leftovers of Lamb roast are sensational the next day in wraps or sandwiches. I have used up leftovers with the remains of a boneless leg of lamb roast. Wraps are the ideal meal, good for lunch or dinner. They are easy to make, healthy and great to enjoy!

All you have to do is, thinly slice the roast lamb piece. Chop some red onion and garlic. In little oil, saute the garlic and onion until soft. Transfer them to a plate. In the same pan saute some shredded cabbage and transfer to the same plate. You can use any vegetables that are lying in your refrigerator like, carrot, capsicum, spring onion, etc.

Now spread some butter on multigrain wraps which are readily available in any store. Next place some sliced roast meat, add the sautéed garlic, onion, tomato slices , shredded cabbage, shredded lettuce and some yogurt mixed with salt, pepper, roast cumin powder and mint leaves for that cooling and satisfying complete meal.

These delicious wraps are great for your kids' breakfast, lunch boxes and of course you too! These are so yummy and costs nothing.

LEFTOVERS OF LAMB ROAST WRAP RECIPE:

Prep time: 5 mins. Cook time: 5 mins. Total time: 10 mins.

Cuisine: Indian

Serves: 2 wraps per person

Ingredients:

  • Piece of leftover lamb roast

  • 2-3 cloves garlic

  • 1 red onion

  • 2 tomatoes, sliced

  • 1 cup shredded cabbage

  • 1 cucumber, sliced

  • Multigrain wraps

  • Some butter to spread on the wrap

  • Some lettuce leaves

  • Oil for sautéing the vegetables and for toasting the wraps

  • 1/2 cup yogurt

  • 1/2 tsp salt

  • 1/2 tsp pepper powder

  • 1/2 tsp roasted cumin powder

  • mint leaves

Method:

  1. Thinly slice the leftover lamb roast piece

  2. In little oil, saute 2-3 garlics and red onion slices until onions are soft

  3. Transfer to a plate

  4. Saute some shredded cabbage for 2 mins

  5. Transfer to the same plate

  6. Slice 1 or 2 tomatoes

  7. Shred some lettuce leaves

  8. Mix yogurt with salt, pepper powder, roasted cumin powder and some mint leaves

  9. Take multigrain wraps and spread some butter on them

  10. Place some meat slices, garlic, onion, tomato, cabbage and cucumber slices

  11. Now add some yogurt mixture

  12. Fold the lower side of the wrap and then bring both the sides together and wrap it up.

  13. For lunch wrap it with some silver foil or butter paper
