MUTTON LEG (RAAN) ROAST
Learn how to cook Masala Raan Roast Leg of Lamb.
This is my version of Mutton Leg (boneless) roast recipe. I have simplified this recipe by cutting down the cooking time and no keeping the marinated Lamb Leg refrigerated overnight.
I have used boneless Mutton Leg and made deep slashes so that the spices penetrate in the meat very well. All you have to do is to combine all spices with yogurt and massage the Lamb Leg with it and pressure cook it for 15 minutes after the 1st whistle.
To tenderise the meat, I have used baking soda with vinegar and sugar which makes the meat succulent within 15 minutes of cooking.
I have roasted some potatoes to go with it and some fresh cucumber and tomato slices. All you need is some plain rice to make it a complete meal.
I don't think there is any other Roast recipe easier than this.

Ingredients:
1 kg. Mutton Leg (boneless)
1 tsp sugar
1/2 tsp baking soda
1/4 cup white vinegar
1 tbsp Salt or to taste
1 tbsp paprika
1 tbsp Kashmiri chilli powder
1 tbsp garlic paste
1 tbsp ginger paste
1/2 tsp turmeric powder
1 tbsp coriander powder
1 tsp cumin powder
1/2 tsp pepper powder
1/2 tsp cinnamon powder
1/2 tsp cardamom powder
1 tsp Shahi jeera
1/2 cup yogurt
1 cup fried red onions
4 tbsp oil
2 large potato cubed and roasted
1 large cucumber, sliced
2 tomato slices
Method:
On a cutting board make deep slashes on the Lamb leg to penetrate the spices well
Now combine all the above slices with salt, yogurt and oil
Massage the spices well on the meat and also in the gashes
Transfer the meat to a pressure cooker, close the lid and cook on high flame until the 1st whistle
After the 1st whistle, lower the flame and cook the meat for 15 mins. and turn off the flame
Open the cooker after it cools and dry the gravy if any with the cooker uncovered
Now plate the roast Lamb on a plate and decorate it with roasted potato cubes, cucumber and tomato slices.
