MUTTON (LAMB) GHEE ROAST

How to make MUTTON GHEE ROAST / MUTTON ROAST Recipe. This is a Mangalorean style recipe. As the name says the star ingredient of this MUTTON GHEE ROAST is GHEE (clarified butter). No other oil on this planet can replace the taste of ghee. There is a misconception that ghee is fattening. Certainly not! 1-3 tsp of ghee a day can increase your good cholesterol. It removes the stubborn fat. It is a brain tonic and it lubricates the joints. The health benefits are plenty.

Besides ghee, the freshly dry roasted spices give the finger-licking flavour to the dish.

I have simplified this recipe to cut down the cooking time by using my home-made All-Purpose Bafat Masala and using pressure cooker to cook the lamb within 15 minutes. Believe me, it tastes great!!! You have to give it a try to believe me.

MUTTON GHEE ROAST RECIPE

Prep time: 10 mins. Cook time: 15 min. Total time: 25 mins.

Ingredients:

  • 1 kg Mutton (lamb) cut into pieces

  • 4 tbsp ghee (clarified butter)

  • 1" cinnamon stick

  • 5 cloves

  • 5 cardamoms

  • 1 tbsp ginger paste

  • 1 tbsp garlic paste

  • 1 large onion, chopped

  • 1/2 tsp turmeric

  • 4 tbsp yoghurt

  • 4 tbsp Bafat masala (see my video on YouTube to make Bafat masala at home)

  • 10-12 curry leaves

  • 1 1/2 tsp salt

Method:

  1. In a wok heat 2 tbsp ghee

  2. Add cinnamon sticks, cardamoms and cloves & wait until they turn aromatic

  3. Lower the flame add ginger-garlic paste and saute until the raw smell disappears

  4. Add chopped onion and salt

  5. Saute until onions turn translucent

  6. Add turmeric powder and yogurt

  7. Mix well and stir

  8. Add mutton and stir for 2 minutes

  9. Transfer it to the pressure cooker and cook over low flame for 15 mins. after the 1st whistle

  10. Now mix 4 tbsp Bafat masala in little water to make a paste

  11. Heat 2 tbsp ghee in the same wok

  12. Add the Bafat paste and saute for a minute

  13. Add cooked Mutton and mix it well and keep stirring until the gravy dries up (unless you want little gravy)

  14. Add a few curry leaves, mix it and switch off the flame

  15. Plate it on banana leaf and enjoy the MUTTON GHEE ROAST!!!
