Hey guys, got a couple of over-ripe bananas in your fruit basket and you don't know what to do with them?

I know kids don't like to eat black spotted bananas. So, lets make some quick fluffy BANANA PANCAKES for breakfast. Just drizzle some maple syrup on them and see how your kids will love them!!! INSTANT FLUFFY BANANA PANCAKES

Prep time: 5 mins. Cook time: 10 mins Total time: 15 mins

Ingredients:

  • 2 over-ripe bananas

  • 2 cups self raising flour

  • 2 eggs

  • 1 cup milk or buttermilk

  • 1/2 tsp vanilla extract

  • 1/4 tsp salt

  • Oil for cooking

  • Maple syrup (optional)

Method:

  1. Combine bananas, egg, vanilla extract, salt, self-raising flour and milk in a food processor. Don't overdo it.

  2. Remove in a bowl

  3. Heat a pan over medium flame

  4. Pour 1 ladle batter onto the pan and cook over very low flame

  5. When bubbles appear on the top and the underside is golden brown, flip it over and cook the other side until golden brown

  6. Remove in a plate

  7. Drizzle some maple syrup and enjoy!!!
