PANDI PORK (COORGI STYLE) FOR CHRISTMAS

Hey guys, put some zing to your tastebuds and try this Coorgi style Pork curry called PANDI PORK CURRY. The freshly roasted spices and the black vinegar called 'Kachampuli' an extract of a sour fruit called 'Kudampuli" gives a unique taste to this curry. In case you don't get this black vinegar, use some brown vinegar. I have simplified this recipe, cooked in the pressure cooker to speed it up and cook within half an hour.

Ingredients:

  • 1kg pork, cut into cubes

  • 2 tbsp coriander seeds

  • 1 tbsp cumin seeds

  • 1 tsp mustard seeds

  • 1" cinnamon stick

  • 5-6 cloves

  • 1 tsp peppercorns

  • 1/4 tsp fenugreek seeds

  • 15-20 curry leaves

  • 1 tbsp Kashmiri chill powder

  • 1/2 tsp turmeric powder

  • 2 tbsp oil

  • 2 large onions, chopped

  • 2 tbsp ginger, chopped

  • 2 tbsp garlic, chopped

  • 2 green chillies, chopped

  • 1 1/2 tbsp salt

  • 4 tbsp Kudampuli extract or brown vinegar

Method:

  1. Wash and cut pork and keep it aside

  2. Dry roast over low flame, coriander seeds, cumin seeds, mustard seeds, cinnamon stick, cloves, peppercorns, fenugreek seeds and curry leaves until brown (but don't burn them).

  3. Cool the spices, add kashmiri chilli powder, turmeric powder and grind them in a spice grinder to a fine powder and keep it aside.

  4. Heat oil in a large pot or in a pressure cooker

  5. Add chopped onions and saute until light brown

  6. Add ginger, garlic and green chillies

  7. Saute for 3 mins. until the raw smell disappears

  8. Add pork, salt and the ground spice powder

  9. Add Kudampuli extract (soaked for 1 hour) or use brown vinegar

  10. Mix it all well

  11. Transfer all this to a pressure cooker to speed up the cooking

  12. After the 1st whistle, cook for 10 minutes over low flame

  13. Open the cooker and adjust the gravy as per your liking

  14. Enjoy and share.
