Shankarpali is a traditional sweet snack made during Christmas. These sweets are crispy, crunchy and taste like the nan-katai bakery biscuits. These are loved by everyone.
You don't have to wait for Christmas. These are very easy to make and are a good tea time snack and you can munch them at any time of the day.
The savoury version is called Shankarpara in North India. Shankarpalis are generally made with all-purpose flour but you can also make them with whole-wheat flour or mixture of both.

Recipe Type: Snacks
1 1/2 cup all-purpose flour
1 tbsp Semolina (rava)
1/4 cup water
1/4 cup milk
2 tbsp ghee (clarified butter)
1/4 cup sugar
1/4 tsp salt
Oil for deep frying
Boil water and add sugar, salt and ghee. Mix them well and keep it aside.
In a food processor, combine all-purpose flour, rava and blend it with the sugar syrup.
Keep adding little little warm milk to make a stiff dough
Cover with a damp cloth and keep aside for 20 minutes
After 20 minutes, knead the dough again and cut into 3 parts
Take one portion of the dough and roll it into a circular disc like a thick roti
With the pizza cutter make diamond or square shape cuts
Slide the diamond cuts on a plate
Heat Canola or any vegetable oil
Over medium flame, gently slide the Shankarpalis into the oil and keep stirring with a slotted spoon
Remove them on a tissue paper when crisp and golden brown
When completely cool, store them in an air tight container and enjoy whenever you feel like it.
