EGG-VEGGIE-CHEESE OMELETTE


Want a healthy and quick breakfast to kick start your day? Or a quick on the-go grub? Well then, you must try this healthier and improved version of the much loved egg omelette which not only gives you protein from the egg but also vitamins, fibre and folate from the vegetables and calcium from cheese of course.

So, whip up a fluffy and nutritious filling with whatever vegetables you have on hand. Frozen mixed veggies are a quick option with cauliflower, carrots, peas, broccoli, sweet corns, etc. And, we all have tasty cheddar cheese at home.

EGG-VEGGIE-CHEESE OMELETTE RECIPE

Prep time: 5 mins. Cook time: 5 mins. Total time: 10 mins.

Ingredients:

  • 2 eggs

  • 1 tbsp milk

  • 1/2 tsp salt

  • 1/4 tsp turmeric powder

  • 1 small onion

  • 1/2 tsp Kashmiri chilli powder

  • 1 green chilli (you can add more if you prefer spicy)

  • 1 tomato, chopped

  • 1/2 cup frozen mixed veggies (any veggies of your choice)

  • 2 tbsp coriander leaves

  • 2 tbsp Cheddar (tasty) shreded cheese

  • 2 tbsp oil

  • 2 tortillas for wraps

Method:

  1. Break 2 eggs in a bowl

  2. Add 1 tbsp milk and whisk

  3. Add salt, turmeric powder, onion, chilli powder, green chillies, tomato, mix veggies, coriander leaves and mix well.

  4. Heat oil in a non-stick pan

  5. Add egg mixture and spread evenly

  6. Sprinkle shredded cheese on top

  7. Cover and cook on low flame until done

  8. Fold gently to make a roll

  9. Cut into half and fill in the tortillas to make a wrap

  10. Cover it with a kitchen tissue if you are carrying in the lunch box
