Well then, you must try this healthier and improved version of the much loved egg omelette which not only gives you protein from the egg but also vitamins, fibre and folate from the vegetables and calcium from cheese of course.
So, whip up a fluffy and nutritious filling with whatever vegetables you have on hand. Frozen mixed veggies are a quick option with cauliflower, carrots, peas, broccoli, sweet corns, etc. And, we all have tasty cheddar cheese at home.

EGG-VEGGIE-CHEESE OMELETTE RECIPE

Recipe Type: Healthy breakfast recipes
1 tbsp milk
1/2 tsp salt
1/4 tsp turmeric powder
1 small onion
1/2 tsp Kashmiri chilli powder
1 green chilli (you can add more if you prefer spicy)
1 tomato, chopped
1/2 cup frozen mixed veggies (any veggies of your choice)
2 tbsp coriander leaves
2 tbsp Cheddar (tasty) shreded cheese
2 tbsp oil
2 tortillas for wraps
Break 2 eggs in a bowl
Add 1 tbsp milk and whisk
Add salt, turmeric powder, onion, chilli powder, green chillies, tomato, mix veggies, coriander leaves and mix well.
Heat oil in a non-stick pan
Add egg mixture and spread evenly
Sprinkle shredded cheese on top
Cover and cook on low flame until done
Fold gently to make a roll
Cut into half and fill in the tortillas to make a wrap
Cover it with a kitchen tissue if you are carrying in the lunch box
