Chickpeas are high in protein, fibre, folate and zinc. They even help in weight loss. Whether you boil them, roast them, toast them or add in curries, they are one versatile legume which everyone loves.
One of my student told me that she had a Chickpea Starter dish at a party and she liked it so much that she wanted me to teach her how to make it. I asked her a few details about that starter and I tried to make one similar to that and I taught her in the next cooking class.
Here is the recipe. So guys, try this easy and quick starter dish for your next party. I have used canned chickpeas which saves the time of cooking. If you have the time, you can soak chickpeas overnight and cook them in pressure cooker for 30 minutes and proceed with the same method of cooking. So, lets get started.

Kurkure Chana (Chickpeas) Recipe

Recipe Type: Party Starter dish
1 can chickpeas
½ capsicum cut into stripes
4 tbsp Canola or any vegetable oil
1 bowl spring onions
1 green chilli, slit
2 whole dried red chillies
1 tsp ginger, minced
1 tsp garlic, minced
1 tsp coriander powder
¼ tsp turmeric powder
1 tsp mustard seeds
1 tsp cumin seeds
10 curry leaves
¼ tsp asafoetida
2 tbsp coriander leaves
2 tbsp tomato sauce
Salt to taste
Open the can and wash the chickpeas thoroughly 3-4 times.
Drain them in a colander and then pat them dry on a kitchen towel
Heat 4 tbsp Canola oil and shallow fry the chikpeas until crisp & golden brown and keep them aside.
In the same pan add mustard seeds
When they crackle, add cumin seeds
Add 2 whole dried red chillies, 1 slit green chilli, 1 tsp each ginger-garlic paste and sauté until the raw smell disappears
Add asafoetida and 10 curry leaves
Add spring onions and sauté for 2 minutes
Add 1 tsp coriander powder, ¼ tsp turmeric powder and salt
Add 2 tbsp tomato sauce and mix it well
Add the capsicum strips and stir
Now add the fried chikpeas and mix them well with the spice mixture
Switch off the flame
Garnish with coriander leaves
