Guys, here is a quick, easy-peasy and cheesy Chapati Pizza for your kid's breakfast.
We Indians always have some left over chapatis in the morning. If you don't have some, then keep some store bought wholewheat tortillas handy in the fridge.
Look for some veggies like carrots, capsicums, cabbage etc. I shred them in a food processor and it saves so much of my time. Saute them and top them on the chapati with some tasty cheese and you have a nice crunchy chapati to feed your kids. It's not only healthy but yummy too. So, lets get cracking!
Ingredients:
2 Chapatis or tortillas
1/2 red onion, chopped
2 garlic cloves, chopped
1 carrot, grated
1/4 cup shredded cabbage
1/2 capsicum strips
1 mushroom, sliced
3 tbsp tomato paste
1 tbsp chilli sauce
1 tsp Oregano
Tasty cheese
Salt to taste
Method:
Heat 1 tbsp oil in a non-stick pan
Add the chopped onion
Add the chopped garlic
Saute for 2 minutes
Add the carrots, cabbage, capsicum and mushroom
Add 1/2 tsp salt
Saute for 3 minutes
Remove and keep aside
Mix tomato paste, chilli sauce and oregano
Spread it on the chapati
Place the chapati on a hot pan over low head
Sprinkle some tasty cheese
Sprinkle the sautéed veggies
Sprinkle some more cheese on top
Cover and cook until the cheese melts
Cut the crunchy chapati with a pizza cutter and enjoy.
