I have always had a love for all things lemony, be it deserts, curries or snacks. This recipe hence evolved to infuse fresh, lemony flavours into the classic Pepper Chicken recipe. The addition of Soya Sauce gives the curry a fantastic twist and makes it a finger-lickingly great fusion curry.

Serves: 6 serves
Ingredients:
800 gm. chicken thigh fillets
2 tbsp Canola oil & 1 tbsp ghee (clarified butter)
15-20 curry leaves
2 chopped green chillies
2 chopped onions
2 tbsp minced garlic
2 chopped tomatoes
2 tbsp crushed black pepper
¼ tsp turmeric powder
2 tbsp lime juice
¼ cup water
1 tbsp Kashmiri red chilli powder
1 tbsp Soya sauce
2 tbsp corn starch mixed with water
Coriander leaves for garnishing
Salt to taste
Method:
Heat oil ghee
Over low flame add curry leaves
Add chopped green chillies
Add minced garlic
Add chopped onions, ½ tsp salt and sauté until the onions are translucent
Add chopped tomatoes
Mix well and sauté until the tomatoes are soft
Add crushed black pepper
Add turmeric powder
Add the chicken pieces
Add lime juice
Add ¼ cup water
Cover and cook until chicken is done
Now add chilli powder, soya sauce and stir well
Add corn starch mixed in little water
Bring it to a boil
Garnish with coriander leaves.
